Pale – wtf?


If you’ve been following me on Instagram, or have seen me in the past week, you probably already know that I’m trying to incorporate a more Paleo-esque diet. I’ve never been good at following diets or rules, but I’m starting to realize that what I put in my trap has a direct link to how I feel. Crazy, huh? Only took me 23 years and a nursing degree to figure that one out…. But here’s the problem. I’m a professional scooper and ice cream lover. Don’t worry too much…..I still believe in balance….and that I can make Paleo ice cream.


Anyways, my mom got me a Paleo cookbook for Christmas which sparked this motivation. I’ve been making some awesome recipes and have also learned that eating healthy is easier when what you’re eating makes you feel good. Last weekend, I learned gluten is evil. I didn’t eat gluten for three days unintentionally and then ate a taco and had, um, “digestive issues” for 8 hours. 8 HOURS. Ugh. Awful. Thank god girls don’t poop or fart. (All I can think about right now is the South Park episode where that guy talks about gluten making your penis fly off. Thats all I’m gonna say about that because my mom reads this…)

Anyways, if you don’t know anything about Paleo I’ll give you a quick run down. Basically it’s the “caveman” diet. It’s eating non-processed whole foods that our ancestors ate. (Read: no grains or dairy.) The thought is that it is eating foods that our bodies were made to eat and tolerate well. It also is a low-inflammatory diet. A lot of people think it can be too restrictive and “crazy” but the thought of eating whole, real foods is super appealing to me.


The hardest part of adhering to a Paleo lifestyle for me is: remembering to food prep, eating out/social events, ice cream/alcohol. I have no interest in living a life that doesn’t involve ice cream or wine but I am interested to see how I can modify it to have a good balance. Weekend Workouts + Recap

Hi friends. Hope you had a good weekend! Mine was pretty good and including some working out, scooping, brunching and shopping.

Friday I was super unmotivated after working at the hospital but I really wanted to get a sweat in so I sucked it up and threw my sneaks on. My motto was “something is better than nothing.” I jogged for a mile and then did a few intervals. I was wiped and hungry so I hopped off and scooted home to watch Little Miss Sunshine with the roomies and chow down on a greek salad and a slice of pizza. Mmmmm, pizza.


Saturday morning Monica and I went to a Body Pump class. I’m really getting excited about strength training but can get intimated, which is why I was so happy to have a buddy to come with me! The class was an hour long and is set to different tracks. Each track focuses on a different muscle area. (One track for lunges/squats, another for curls/presses). Let me tell you, those Body Pump chicks don’t eff around. I immediately knew they were no non-sense when like half the girls in there were wearing gloves. That’s badass. The class was a lot of fun and I’m already planning on going back this week, but about 45 minutes in I thought my shoulders were going to burn off my body and I was done. After I recovered (read: drank a latte and cried in the shower) I met some of my best friends, Shannon and Haley for brunch, watched the first half of the Pat’s game with G, scooped ice cream, then drank wine and practiced crow in my living room. (Crow is a yoga pose for you non-yogis.)


Sunday morning I woke up and told G I needed eggs benedict STAT or else I would die. (I tend to be dramatic when I’m hypoglycemic.) After I was fed and caffinated, we walked around Newbury St and I accidentally bought more Lululemon. When I got home, Monica was heading to the gym so I tapped into her motivation and tagged along!


Monica and I attempted to do abs but really just rolled around and then left. But before that, I completed *most* of the work out I had planned below.


I was super pooped after those sprints. I don’t know if my huge breakfast was catching up with me or if we walked farther than I realized yesterday afternoon, but that last mile was more of a walk….. Okay, okay, a complete walk. Anyways, I went home and spoiled myself with a salad from Sweet Green that I picked up when we were downtown and a Maine Beer Co beer.


Unfortunately when I settled on the couch to unwind with a glass of wine (Yes, I drink beer. And wine. In the same night. Judge me, I dare you.) I got this text showing a leak at the ice cream store…


So obviously I had to put the bottle down (kidding! kind of…) and scoot to the store. Thankfully it was resolved by the time I got there but I was panicked when I saw that picture!

This morning I was tired. I have such a tough time going to bed on time and not hitting snooze in the morning. Any tips? By the time I got moving, I wanted to hit the gym and grocery store before work. I only had about twenty minutes to exercise so I flew through two rounds of the workout I shared last week.


Then I went to the grocery store to stock up on some goodies for some paleo creations this week! Stay tuned… Peace!

Gym hog

Hi friends. How was your day? I woke up today after a weird night shift and promptly ate eggs and bacon on my couch in my bathrobe. It was quite the site. Anyways, I was feeling off today and knew I needed to just sweat it out so I headed to the gym. I’ve recently joined Healthworks and I LOVE it. I love it so much that I bullied Monica into joining too. It’s so nice belonging to a gym that I actually want to go to. I was afraid to pee at my old gym because I thought I would catch an STD from the toilet seat…..yup, it was that disgusting.

At Healthworks I was able to meet with a personal trainer for one complimentary session. She was kind enough to write down the work out we did so I can keep it and keep doing it. Check it out!

To clarify, I did not do the sprints in-between rounds, that was just for warm up. I was a total gym hog today. I went at a busy time, so there were so many people crawling about. But I was no-nonsense today so I took up a lot of space in the corner because I had work to do! Sorry, not sorry.

I was so hungry that I forgot to snap a picture of dinner but I made cauliflower rice and topped it with a beef-ginger stir-fry. It was pretty tasty but next time I want to make a sauce to go with it! I’m so excited to try other recipes in this book. I think the Paleo diet is getting a lot of hype which is awesome, but I’m not good about being strict. I’m trying to “clean up” my diet so this book is a helpful start!

My goal for 2016 is to never have to blog another apology ever again… I’ll say it before you guys can…. Court, where the EFF have you been?

I’m sorry, I’m sorry! I got caught up in a bad cold and the holidays….ugh what a lame excuse. Come on, Court. Pull it together, sista.

OK, can we be friends and move on since I made the blog pretty?

Anyways, I’m not sure about you guys but I’m not making any big resolutions for the new year. Did you make any? I think my biggest hope for 2016 is to get into a good routine. I’ve been trying to start doing this for the past couple of weeks. This includes having a bedtime and sticking to it, planning my workouts and writing them down so I can’t skip out on them, and also meal planning for the week so I always know what’s for dinner. So far I’ve been doing OK with it, but I know I can do better.

While I’ve been away from the blog world, I’ve joined a new gym (more on that next week) and got an awesome cookbook for Christmas so stay tuned! Below are some photos of what I’ve been up to including my 5 year highschool reunion and a way-too-fun New Years.
