Tuesday = Saturday. Right?

I’ve been spoiled with four days off and now am prepping for three full days on in a row. Oof. I already feel tired and wiped out. Knowing I probably won’t work out the rest of this week, I woke up and went to the gym to run on the treadmill. For some reason I have better stamina on the treadmill. It was beautiful out in Boston today but I think sometimes I get distracted and end up walking to take it it. But today I was determined to run to get back into it. I ran 2.6 miles before I started to get so hungry I had no choice but to go home and eat some eggs with avacado, salsa, and ezekiel toast.

After I showered, I went to the grocery store so I could food prep for the rest on the week. Today I made eggplant parm with spaghetti squash, beef stew in the crockpot, and did my first try at homemade granola bars!

These bars were so easy to make! I followed this recipe.  I used almond butter instead of peanut butter and added dried cranberries (that I made!), almonds, and coconut. They are so moist and delicious. I think they’ll make a good breakfast for the next few days.

I rounded out my day with some hot yoga and now am getting settled in bed to watch and episode of American Horror Story and hit the hay.

I need these days to fly by so I can get back to weekend mode!
